Cajun Jambalaya Appetizers

For Mardi Gras this year, make a party app that you can cook ahead of time in large quantity, then serve with ease the day of. This app is flavorful and perfect for those who love to make-ahead so that they can enjoy themselves during the celebration.


6 oz bacon
1/4  lb Andouille sausage, cut into half-circle slices
2 cups chopped onion
8 green onions, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
2 large celery stalks, chopped
1/4 lb raw shrimp, peeled and deveined
3 skinless boneless chicken thighs, cut small pieces
2 T paprika
1 T fresh thyme, chopped
2 T chili powder
1/4 teaspoon cayenne pepper
1 1/2 10-ounce cans diced tomatoes and green chiles
1 1/3 cups beef broth
1 1/4 cups long-grain white rice
Bacon Habanero Pretzel Crisps®

Dice the bacon and cook it in a deep pan over medium heat until it is brown, but not too crispy.  Add sausage and cook until it is brown, then add the onion, bell pepper and celery.

Add in the shrimp and chicken. Season everything with paprika, thyme, and cayenne pepper. Pour in the diced tomatoes, and beef broth. Stir it together and cook for a minute. Add more cayenne pepper or chili powder, if desired. Stir in the rice.

Turn up the heat to bring to a boil. Place the cover over the pan and bake for about 45 minutes, or until the rice is soft and moist.

Spoon onto Bacon Habanero Pretzel Crisps®, or any Pretzel Crisps® flavor of your choice. If making ahead of time, store it in the refrigerator. Reheat it on low heat and spoon onto Pretzel Crisps® right before serving.
