Chopped Veggie Spring Salad

This fresh and colorful salad can be eaten alone, or as a side. Make the chopped vegetable salad for a spring brunch or Mother’s Day.


  •  1 cup corn
  • 2 small tomatoes
  • 2 stalks celery
  • 1 cucumber
  • 1/2 red onion


  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons white vinegar
  • 2 tablespoons canned jalapeno, seeded and finely diced
  • 1/4 teaspoon celery seed
  • Salt and pepper to taste


Mix together, mayonnaise, vinegar, jalapeno, and celery seed. Dice tomato, celery, cucumber, and onion. Add to dressing, along with corn. Stir thoroughly to combine. Add salt and pepper to taste, if needed.
