Peanut Butter and Pretzel Crisps® Truffles
These peanut butter and Pretzel Crisps® truffles are adorable to look at and over-the-top indulgent. Make them for just about any holiday or event. Peanut butter and pretzel lovers can’t get enough of these!
3/4 cup rice cereal
1/2 cup Pretzel Crisps® regular or gluten free
1 cup Peanut Butter & Co.® Smooth Operator®
6 T butter
Pretzel Crisps® Minis, regular or gluten free
Process the rice cereal and Pretzel Crisps® in a food processor until they reach a powder-like consistency. Add in peanut butter and butter and process until fully smooth and combined. Cover and place in the refrigerator until firm.
Once firm, use a mini scooper to scoop peanut butter into balls. Place on a wax or parchment paper-lined plate and set back in the fridge until the balls are firm.
Place melting chocolate in the microwave and heat for 20-second intervals at 50% power. Stir the chocolate in between intervals until it is melted and smooth.
Working quickly, use two toothpicks to pick up a peanut butter ball and place it in the melted chocolate. Remove the ball from the chocolate and wipe off any excess chocolate. Place the ball back on the paper and press Pretzel Crisps® Minis on top of the truffles. If the chocolate is already cooled and hardened, dab chocolate on Pretzel Crisps® Minis to get it to stick.
Tip: The peanut butter balls will soften very quickly, so it is best to remove them from the fridge one at a time and work quickly. If the peanut butter becomes too difficult to work with, feel free to add more processed rice cereal to make it more firm.
