Pimento Cheese Appetizer

If you are into anything make-ahead, then this is the recipe for you. Great for a snack, something to bring to dinners and parties, or for guests stopping by unannounced.  You can make this fairly far in advance and simply have a bowl on hand in the fridge for any reason. Add extra cayenne for some spice!


2 cups (8 oz) sharp cheddar cheese, grated
2 cups (8 oz) extra-sharp cheddar cheese, grated
1 cup drained pimentos or roasted red peppers, diced
½ cup mayonnaise
1 tsp Dijon mustard
½ teaspoon celery salt
1 tsp smoked paprika
1 tsp cayenne pepper

Begin by grating your blocks of cheese. One block is white cheese, the other orange. Drain your jarred pimentos or roasted red peppers. Dice into small pieces. Combine the cheese and peppers into a bowl.

Add mayonnaise, mustard, salt, paprika, and pepper. Mix well with a spoon. Add to taste cayenne pepper for heat or paprika for more smokiness. Refrigerate for about an hour. Scoop the pimento cheese onto Pretzel Crisps® and serve.
