Pretzel Crisps® Crusted Zucchini Fries

A healthy recipe that doesn’t skip out on flavor, Pretzel Crisps® encrusted zucchini fries are the perfect summertime appetizer or side. Dip in a creamy dressing that is Greek yogurt-based to keep it light. You can even slice the zucchini ahead of time to make cooking quicker.

3/4 cup Sriracha & Lime Pretzel Crisps® crumbs
1/2 cup grated parmesan cheese
Pepper and salt
Dry Italian herb mix to flavor
1/4 cup flour
2 eggs, whisked
2 large zucchini
Chopped parsley

Slice the zucchini in half and then slice each piece in half again. Cut into thin, French fry portion slices. If you are cutting ahead of time, store in between paper towels in a gallon Ziploc bag.

Turn oven on and set it to 450 degrees. Process Sriracha & Lime Pretzel Crisps® in a food processor into crumbs. Drudge zucchini sticks through flour that is seasoned with salt and pepper, then dip in egg. Coat in crumbs that have been mixed with Italian herbs and parmesan cheese.

Spray a baking rack with vegetable oil. Place on a baking sheet. Line baking rack with zucchini and bake for about 20 minutes or until slightly brown. Top with chopped parsley and serve with dipping sauce.
