Create a festive rainbow salsa that’s clean and healthy. Substitute in any colorful veggies in place to match your preference. Drizzle a homemade chipotle dressing that will add a fun kick of spicy flavor to the salsa.
Red bell pepper
Orange bell pepper
Red (purple) onion
1 T apple cider vinegar
1 T honey
¼ cup vegetable oil
1 garlic clove
1/4 teaspoon dried oregano
1/4 teaspoon paprika
Pinch or two of salt
Pinch of black pepper
Chipotle peppers in adobo sauce (use only one of the peppers)
Begin by cutting bell peppers. Slice bottom and top off, then slice down side to open up into one flat piece. Remove any innards and seeds then cut into thin slices. Pile slices and dice into tiny squares.
Cut bottom and top of red onion. Slice vertically, or long ways. You should not end up with rings if you are slicing in the right direction. Pile slices and dice into squares.
Slice jalapeños in half and remove seeds. Dice, and make sure to wash your hands thoroughly.
For dressing, combine all ingredients into a blender, except for olive oil. Blend, then slowly pour in oil until it appears to be the right consistency for dressing.
Combine all vegetables and fruit in a bowl, lightly toss some dressing, a little at a time, until desired flavor has been reached. Serve by scooping with Pretzel Crisps® for a healthy snack.
