⅓ Cup honey
1 Tbsp. coconut oil
⅛ tsp. kosher salt
¼ Cup whole almonds
¼ Cup chopped walnuts
2 Tbsp. salted peanuts
1 Tbsp. pumpkin seeds
2 Tbsp. dried cherries, chopped
¼ Cup dark chocolate

  1. Line a sheet pan with parchment paper and evenly arrange crisps “face-side” up on the pan. In a small saucepan, heat honey, coconut oil and salt over medium heat until thickens and turns a deep golden caramel color, about 10 minutes.
  2. Fold in nuts and stir until well coated. Remove from heat and allow to cool slightly to thicken.* (Don’t cool too much or the sauce will harden and the nuts will be difficult to scoop.) Scoop about 1 Tbsp. nut and honey mixture onto each crisp. Place in the refrigerator for 15 minutes to harden.
  3. In a small, microwave-safe dish, add chocolate chips. Microwave on high, in increments of 30 seconds, stirring in-between each until completely melted. Drizzle chocolate over the tops of the hardened nut clusters, sprinkle with sea salt and refrigerate until firm.
