Original Pretzel Crisps®
1 cup dry brown lentils
1 cup red onion, diced
2 cloves garlic, minced
1 bay leaf
1/2 teaspoon dried thyme
2 tablespoons lemon juice
1/4 cup chopped parsley
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup olive oil


  1. Combine lentils, onion, garlic, bay leaf, and thyme in a saucepan. Add enough water to cover entirely and continue to bring to a boil. Reduce the heat and simmer uncovered for about 15-20 minutes or until lentils are tender.
  2. Drain the lentils and vegetables and remove the bay leaf from the mix. Add olive oil, lemon juice, parsley, salt and pepper to taste. Toss the salad to ensure it is thoroughly mixed.
  3. Top Original Pretzel Crisps® with the mixture and serve!
