3/4 cup roughly chopped Original Pretzel Crisps®
2 Roma tomatoes, seeded and diced
2 Persian (small) cucumbers, seeded and diced
1 green onion, thinly sliced
1 lemon, juiced
1 cup parsley tips, chopped
1 tablespoon extra-virgin olive oil
1/4 teaspoon salt
2 ounces goat cheese (1/2 small goat cheese log)
1 tablespoons extra-virgin olive oil
Zest of one lemon, reserve 1 teaspoon for garnish
1 teaspoon za’atar spice, for garnish (optional)


  1. Stir the first 7 ingredients until combined. Stir in the Original Pretzel Crisps® immediately before serving. For the Whipped Lemon Goat Cheese, crumble the goat cheese in a small bowl. Drizzle the olive oil over the goat cheese and vigorously whisk the two together until the mixture is airy and smooth, about three minutes. Stir in the lemon zest until just combined.
  2. To assemble, mix in the chopped Original Pretzel Crisps® into the salad and distribute among the four appetizer glasses. Top each glass with a tablespoon of the whipped lemon goat cheese. Garnish with 1 teaspoon of lemon zest and a pinch of the za-atar spice.
