Strawberry Cheesecake Popsicles (Gluten and Dairy Free)
Enjoy a cool and creamy strawberry dessert that’s super simple to make. This is a summer recipe for gluten and dairy intolerant diets, or anybody who wants a healthy take on a sweet frozen treat.
4 ounces dairy free cream cheese alternative
1 ½ cups strawberries
1/8 cup confectioners’ sugar
3 T alternative milk, such as almond, soy or coconut
1/8 cup coconut milk yogurt
3/8 c T Gluten Free Original Pretzel Crisps® Minis crumbs
1 T + ¾ teaspoons vegetable oil
In a food processor, pulse Gluten Free Original Pretzel Crisps® Minis to a fine crumb consistency. Mix in a bowl with vegetable oil and set aside.
Place remaining ingredients into a food processor and mix on low until strawberries are broken down and all ingredients are combined.
Pour strawberry mixture into a popsicle mold or any silicone mold. Carefully press Pretzel Crisp® crumbs on top to cover. Stick a popsicle stick or decorative straw into each mold and freeze until hard.
