Honey Mustard & Onion Pretzel Crisps®
12 Ounce Shelled Edamame– Cooked per Package Directions and Cooled
1 Small Ripe Avocado – Peeled and Seeded
½ Small Onion – Diced
2 Cup Parsley – Chopped
1 Garlic – Minced
¼ Cup Fresh Lime Juice
4 Tbsp Olive Oil
1 Carrot – Peeled and Julienned – Used as a Garnish
Salt and Pepper to Taste


  1. Cook edamame per package directions. Reserve ½ cup of water and drain remaining water and cool.
  2. In a food processor or blender, add cooled edamame beans and reserved water. Scoop out avocado meat and pulse until coarsely chopped. Add onion, parsley, garlic, lime juice and olive oil, salt and pepper. Pulse until smooth. Garnish with carrots and serve on Honey Mustard & Onion Pretzel Crisps®.
