1 Cup Refried Beans
3 Tablespoons Spicy Red Enchilada Sauce
1 Tablespoon Cotija Cheese, Finely Crumbled 1 Tablespoon Fresh Chives, Finely Chopped 1/2 Tablespoon Butter
4 Eggs
A Pinch of Freshly Ground Black Pepper


  1. Place 25 whole Pretzel Crisps® face up on a serving plate.
  2. Warm beans and enchilada sauce in a pot over low-medium heat, stirring once per minute. In a small bowl, combine Cotija and chives, then set aside. Warm butter in a large skillet, then crack and drop in eggs and pepper and cook for two minutes, stirring to break and incorporate the yolks.
  3. Top Pretzel Crisps® with 1/2 tablespoon bean mixture, 1 teaspoon egg and 1/4 teaspoon Cotija blend. Serve immediately.
