Smashed Chickpea Sandwiches
1 can garbanzo beans (chickpeas), drained and rinsed
¼ cup diced dill pickles
¼ cup purple onion, finely chopped
2 ½ teaspoon Dijon mustard
1 ½ teaspoon apple cider vinegar
2 T mayonnaise
2 teaspoon fresh dill weed, diced
Dash of turmeric powder
Salt and pepper to taste
Combine all ingredients into a food processor. Pulse to smooth, or you can leave some chunks.
Dollop on Pretzel Crisp. Top with pickle slices, then top with another Pretzel Crisp to form a sandwich.
